Cap 'O' Spice Chicken Curry Recipe:

Ingredients:

A. Paste

- 25g (1 packet) Cap 'O' Chicken & Meat Curry Powder

- 12 Shallots (pounded)

- 6 Garlic cloves (pounded)

- 2-inch Ginger (pounded)

- 1 cup Water


B. Sautee Ingredients:

- 1/2 cup Cooking oil

- 1 Onion (sliced)

- 3 Garlic cloves (sliced)

- 1 Cinnamon stick (1 inch)

- 1-2 Star anise

- 1-2 Cloves

- 1-2 Cardamoms

- Curry leaves stalk


C. Main Ingredients:

- 1 tbsp Tamarind paste (mixed with 1/2 cup water) or 1 slice Tamarind fruit

- Salt and sugar (to taste)

- 600g Chicken or Beef

- 200g Coconut Milk

- 2 Potatoes (cut into 4)

- 2 Tomatoes (cut into 4)

- 2 1/2 cups Water


Cooking Instructions:

1. Mix ingredients A to create a paste.

2. Heat cooking oil, sauté ingredients B until fragrant and golden yellow.

3. Add the paste (ingredient A) and sauté until thickened with oil separation.

4. Add salt, tamarind paste/fruit, and sugar to taste.

5. Introduce coconut milk, potatoes, and 1 cup of water. Once boiling, add chicken or beef.

6. After boiling, reduce heat, add tomatoes, and simmer for 5 minutes.
